We all know that when we say "Holiday Season" what we really mean is its Cookie Season. And WHAT a time to be ALIVE. I am an advocate for your health and I am a big advocate for this cookie recipe. Don't let be confused about what to eat this season. You can make choices that heal your body AND indulge your taste buds.
My brother and I have a yearly fall tradition of going somewhere to celebrate the change of the season. One year we went to a tiny town near Vancouver, Canada. The little town of Britania Beach, BC was once a copper-mining town. It sits on a quiet foggy bay just outside of the bustling metro of Vancouver. We were looking for a picturesque and silent retreat. Britania Beach did not disappoint. Between the crisp clean air, and the majestic peaks, our view was no less than a fairy tale. It took several days, and multiple batches, but we perfected our No-Bake Keto Cookies. Our final version was devoured as we watched the clouds roll and to create a blanket of fog as the sun backlit the bay.
1/2 cup nut butter (any kind)
1/2 cup unsweetened coconut flakes
1/4 cup coconut oil
1/4 cup Vital proteins collagen powder
10 drops liquid Stevia
1/4 teaspoon salt
Combine all the ingredients above in a bowl with a spoon
Place the bowl in the freezer for 10 minutes
Once the mixture has slightly hardened, use a cookie scooper or a spoon to scoop out 7 equally sized cookies
Store in the fridge for up to 1 month or freeze for up to 3 months
