Low-Carb Loaded Nut Butter Protein Bars

Want an easy and delicious snack on-the-go? These yummy, protein-packed bars are great to have on hand. Some of the benefits you can expect are a boost in energy, a long-lasting sense of "full" and some added antioxidants (thanks, Pepitas!).

I love me some good nut butter.  Creamy, salty, crispy, and crunchy....that about sums up my love affair with textures in my food.  Sometimes I need a little nibble and these little bites are perfect to satisfy my brain and my body.  

Ingredients

1/2 cup creamy nut butter

1 cup unsweetened flaked coconut

1 tablespoon chia seeds

1/4 cup pepitas 

1/2 cup protein powder (or collagen peptides)

1/2 teaspoon vanilla powder

1/2 cup melted coconut oil

1/4 cup cacao nibs 

Directions

In a small saucepan, combine all ingredients on low heat until nut butter and coconut oil are fully mixed.

Pour into mold or ice cube tray and place in freezer to harden.

Store leftovers in an airtight container in either the fridge or freezer.
