Carly's Southwest Salmon Patties (Whole30 Approved)

How's your Whole30 going? Feel like you want to punch through a wall from the cravings yet? Don't worry, they'll get better...eventually (we hope). I've got a recipe for you this week that's sure to keep you satisfied and hopefully stave off those cravings for longer. 

Now, in my normal life, I love making the Paleo version of this recipe, which calls for plantain chips as an afterthought on top of these patties, and that's part of what gives them that "southwestern" appeal. I would like to reiterate what you may have already heard from those that created the Whole30, but store-bought chips of any kind are not allowed on the Whole30 diet. Whole30 isn't just about restricting foods, it's about breaking habits. 

Sometimes, when we're snacking on chips, we go full out, no brakes and either overeat or eat a lot more than we were planning. This is a habit-forming occurrence, and it doesn't build a healthy relationship with food. Whole30 works to break those habits and repair our relationship with food, so just watch out for that, okay? Carly's Southwest Salmon Patties (Whole30 Approved)

Total Time: 20 minutes

Serves: 4

Ingredients

2 6oz cans Alaskan Salmon drained and flaked
2 eggs lightly beaten 
1 handful cilantro finely chopped
2-3 lemons zested and juiced, divided
garlic finely chopped
salt and pepper to taste

 

Directions

`1. To flaked salmon, add eggs, parsley, the zest and juice of 1 lemon, 2/3 of the
total amount of chopped garlic and lots of black pepper and a little salt. Mix
together and form 4 large patties or 8 mini patties.

2. To a salad bowl add the remaining zest and lemon juice and remaining garlic.
Add lots of black pepper, no salt.

3. Preheat 2 tablespoons, of extra-virgin olive oil, 2 turns of the pan, in a nonstick
skillet over medium to medium-high heat. Cook salmon patties 2 to 3 minutes on
each side for mini patties, 4 minutes on each side for large patties.

4. Season salmon patties with the liquid mixture and serve immediately.
