Carly's Paleo Fish (Air Fryer Addition)
I loveeeeee my air fryer. Can anyone relate? In honor of the giving season, I thought I would share this fun recipe and remind you that if you haven't already invested in one, maybe you should consider an air fryer for the health freak in your life? Enjoy these air-fried fish sticks with homemade aioli. YUM!
I eat fish because I know it's "good for me." I don't love the taste of any fish. Sometimes a preparation will taste better than another, but in general, I could pass on it altogether. But you wouldn't know any of that if you watched my eating habits. I eat fish at least 4 times per week. I'm always looking for EASY ways to make it exciting and taste LESS like fish. This preparation even got a thumbs up from the biggest fish critic I know---my hubs!
Ingredients
2 six-ounce cod fillets (you could also use lemon sole, halibut or pollack)
1/2 cup almond flour (I don't recommend trying tapioca or arrowroot)
1/2 teaspoon garlic powder
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon pepper
1/8 teaspoon cayenne
1 egg
Cooking spray
Directions
Cut each fish fillet into about 3 or 4 pieces
Clean pieces and thoroughly pat dry
Make the batter next - simply combine all the batter ingredients and stir well
Wisk egg and a small amount of water
Dip fish in batter, then egg, then batter again
Cook 5 minutes and then flip over and cook for an additional 5 minutes
Sprinkle with sea salt and serve
